An omakase counter for ten. One chef, one season, one quiet hour — served at the pace of falling light.

The Idea

A meal can be as empty as a clear sky — nothing to prove, nothing in excess. A single fish at its peak, a breath of warm rice, and the right silence held between one course and the next.

Chawanmushi, Dashi, Yuzu

A warm, trembling custard to open the room and quiet the table.

Sashimi of the Morning Catch

Whatever arrived best that day, cut thin, dressed only in its own clarity.

三 · III

Tai, Aged Three Days

Sea bream rested on the bone — the first nigiri of the evening.

四 · IV

Akami, Soy-Cured

Lean tuna brushed with our own nikiri, the rice still warm from the hand.

五 · V

Otoro, Lightly Seared

The fattest belly, kissed with flame until it melts before the rice does.

六 · VI

Hokkaido Uni, Nori

Sea urchin at its sweetest, wrapped in crisp seaweed, eaten at once.

七 · VII

Anago, Sea Salt

Saltwater eel simmered soft, finished with salt instead of sweet glaze.

Tamago, Honey, Tea

A pillow of slow-cooked egg, and a bowl of stillness to close.

The Itamae

Itamae

Kenji trained for a decade in Tokyo before a single guest was allowed to watch him work. He says the rice took him longer to learn than the fish, and that he is still not finished with it.

At Sora he stands alone at the counter, cuts to order, and speaks little. The meal is a conversation held mostly in gesture — the placing of a piece, a small bow, the turn of a knife.
