Nine Courses, One Glow

£165 per guest · wine pairing £95 · the menu turns with the light of the season

Oyster, Cucumber, Frozen Buttermilk

A cold opening, lit from below — the first thing you taste before your eyes adjust.

Hand-Dived Scallop, Brown Butter

Raw at the centre, translucent in the beam, dressed with a dashi of its own roasted skirts.

Beetroot Lacquered in Its Own Glaze

Cooked eight hours, finished until it shines like glass under the light.

Cep Custard, Chestnut, Black Truffle

Served warm so the steam climbs into the beam as the spoon goes down.

Turbot on the Bone, Champagne Butter

Rested longer than it is cooked, sauced at the table, glistening.

Aged Duck, Burnt Honey, Wild Plum

Forty days dry-aged, carved at the pass, glazed until it catches fire-light.

Comté, 36 Months, Toasted Malt

A single farm, served at the exact temperature of the room.

Blistered over the last of the embers, the only warm light left on the plate.

Dark Chocolate, Sea Salt, Nothing Else

The beam dims a final notch. One piece, made that afternoon, eaten in the glow.

The Chef

Chef Patron

Trained between Copenhagen and the Basque coast, Lena spent a decade chasing one frustration: that the most beautiful plates of her career were always ruined by the lighting that revealed them.

Aura is her answer. A room designed backwards from the light — the menu, the ceramics, even the pace of service all built to live inside a single warm beam. She still plates the final course herself, in near darkness, by feel.
